We've been trying to eat better - more vegetables, less junk. I won't say we're perfect, but we have been improving, which means we're at least headed in the right direction. We've been experimenting with salads and I came up with a recipe tonight that was pretty darned good.
You can check it out here: Chipotle Chicken Mango Salad. It's got chicken, avocado, tomatoes, corn, mangoes, poblano chiles, and a special lime dressing. The dressing is made with butter and olive oil, but you really don't need a ton so there's no need to feel guilty, right?
We decided, though, that as good as it was, it would have been even better if we'd used grilled salmon instead of chicken. The salmon at the store yesterday looked like it had passed it's prime - which just means we'll have to have this again really soon.
