Salmon the Fishie

For his birthday dinner, Nathan requested "Salmon the Fishie" with broccoli and baked potatoes.  You've gotta admit that there aren't very many little boys who'd request a meal like that for their 5th birthday dinner!  I mean, Salmon I can understand, but broccoli!?!?

When I make salmon, I usually make one of two sauces: a honey teriyaki glaze or a peach chutney.  Nathan requested the "peach sauce"so that's what I made tonight and boy was it delicious!  So, here's how I cook the salmon (always with a boneless fillet)

1. Heat the grill - I use the lowest heat setting.

2. Place the fish on a piece of aluminum foil, skin-side down.

3. Put the foil on the grill and close the lid.

4. Let it cook 'till the salmon is nearly cooked through (about 10-15 minutes, depending on the thickness of the fish).

5. Remove from the grill and allow to rest for about 10 minutes.

And, as an added bonus, the skin usually just sticks to the foil and you can slide the fish right off to serve.

Todd always finds the best salmon, too. The ones at Macey's didn't look good so he went to another store. I think that is part of how his food turns out so good is picking out the best stuff.
