Fresh Basil Pasta

1 1/2 Cups Flour
2 Eggs
1 Tablespoon Olive Oil
1/2 teaspoon Salt
1 Tablespoon Fresh Basil - Chopped

Place flour in the bowl of a food processor and add remaining ingredients. Process until it comes together into a tough dough. (If you don't have a food processor, you can do this in a bowl by hand).

Turn dough out onto a lightly floured work surface and knead by hand for 4 to 5 minutes. Using a pasta machine, roll dough on the thickest setting, fold in half and repeat a few times. Then, gradually move down to the desired thickness, rolling and folding each time.

To cook: boil 1 gallon of water and add pasta. Once water returns to boiling, cook for 3-4 minutes or to desired doneness. Fresh pasta cooks much quicker than dry pasta so don't let it go too long!
