Shrimp Kebabs

1/4 Cup Salt
1/4 Cup Sugar
6 Cups Water
2 Cups Ice Cubes
1 Pound Shrimp, Peeled and deveined
4 Tablespoons Olive Oil, Divided
1 Medium Yellow Onion, Chopped into 1/2-inch pieces
1 Red Bell Pepper, Chopped into 1/2-inch pieces
1 Medium Pineapple, Chopped into 1/2-inch pieces
3 Tablespoons Honey
1/2 teaspoon Salt
1/2 teaspoon Grill Seasoning Blend
1/4 teaspoon Old Bay Seasoning
1/4 teaspoon Black Pepper

Combine salt, sugar, and water in a large bowl. Stir to dissolve and add ice cubes and shrimp. Refrigerate for 30 minutes.

Toss onions and bell pepper with remaining 2 Tablespoons olive oil. Skewer onions and peppers and grill over medium heat till they start to soften, about 5 minutes.

Skewer pineapple and grill over medium heat till they start to soften, about 5 minutes, brushing with the honey near the end.

Drain shrimp and dry on paper towels. Toss shrimp with 2 Tablespoons of olive oil along with, salt, grill seasoning, Old Bay, and pepper. Skewer shrimp and grill over medium heat just till cooked through, about 2 - 3 minutes.

You can also make the same dish without the 'kebab' part - just saute the onions and peppers till they start to soften then put them in a serving bowl.  Add pineapple and honey to the pan and cook for about 5 minutes, or until the pineapple is warmed through and begins to soften.


Meanwhile, place an oven rack on the top shelf and pre-heat the broiler.  After tossing shrimp with oil and seasonings, place in a single layer on the baking sheet and broil till cooked through, about 2-3 minutes.
