Spiced Pear Cookies

Cookies:

1 C Brown Sugar, packed
1 C Sugar
1 C Butter
3 Eggs
2 Tablespoons Vanilla
5 C Flour
1 teaspoon Baking Powder
1 teaspoon Baking Soda
1/4 teaspoon Nutmeg
1/2 teaspoon Salt


Filling:

1 Cup Spiced Pear Butter

Cream sugars and butter until fluffy. Add eggs one at a time, mixing well between additions. Add vanilla.

In a small bowl, combine flour, baking powder, baking soda, nutmeg and salt. Add dry ingredients to the butter mixture and mix just until combined. Chill dough in the fridge for one hour.

On a lightly floured counter top, roll dough to 1/4-inch thickness and cut into 2-inch rounds. Spoon 1 - 2 teaspoons of pear butter onto a circle and then top with another circle then gently press the edges together to seal. Place on a baking sheet and bake for 10-13 minutes, until lightly browned.

Allow cookies to sit on the sheet for 1 minute after removing from the oven, then remove to a wire rack and allow to cool completely.
